Festive Boxing Day Brunch
December 26th, 2013, from 12:00 hrs.

Choose from the many delicious choices of our Brunch Buffet at Room Fuerstenhof and in room Richard-Wagner-Saal.

Selection of starters
Pink roasted rip of beef, salmon with a herb-lime crust, salmon with a
honey-dill sauce, smoked halibut with horseradish cream, duck breast
marinated with avocado oil and chili on china-cabbage salad, selection of
European smoked and cured hams, salamis with cranberries stuffed figs,
marinated Greenland prawns, selection of pies and terrines with mango
chutney, smoked rack of suckling pig with assorted herbs salads,
caramelized apple wedges, pineapples filled with exotic chicken salad,
green lips filled with Bouillabaisse salad, leaf salad selection with blood
orange vinaigrette, balsamic-walnut dressing and sea buckthorn-cinnamon

Quail essence with pine kernels cams

Main courses
Pork loin medallions wrapped in bacon served on cream leek, local smoked
beer sauce and potatoes patties
Traditional roasted geese with mugwort sauce, filled baked apples, red
cabbage and dumplings
Crispy pike perch fillet under an onion crust with caramelized grapes,
Riesling sauce and small pumpernickel potatoes
Marinated fawn roast served with fried chanterelles and quinces tagliatelle
Grilled suckling pig chops with red wine shallots; Bavarian sweet mustard
sauce served with potatoes-bacon gratin and mixed winter vegetables
Stripes of meat tenderloins in a creamy cepes sauce and fried potatoes
Vegetarian pumpkin-potatoes cake
